Easy Bistro is one of the classiest, most sophisticated restaurants in Chattanooga, which is pretty amazing considering it’s located right smack in the middle of Tourist Central (beside Ben and Jerry’s and 1000 ft from the Tennessee Aquarium). The menu changes seasonally and the specials change nightly, depending on what local ingredients are in season.
If you’re looking for a nice cocktail, a girls night or a low-lit spot for a date that makes you feel like you’re in a big city, than go to Easy.
Tuesday night I was there for a girls night. We started out with drinks in the bar area on plush, pea-colored couches before moving to lacquered, mod high top tables for dinner

We started with a cheese plate that included 3 cheeses, some bread, crackers and a fig jelly. I have no complaints although I wish there was at least another cheese selection. I don’t like goat cheese or blue cheese and those made up 2 of the 3 samples.
My one warning about Easy Bistro is that if you eat only poultry or are a vegetarian, then you might want to go elsewhere. The menu is heavy on red meat, second only to their seafood and fish selection. I’m a vegetarian (although I cheat in the name of good fried chicken and BBQ…which makes living in Tennessee DIFFICULT!) and generally end up getting a salad or their risotto, of which the flavor changes nightly but the quality does not.

I ended up with a creamy mushroom soup (made with mushroom stock) which was PHENOMENAL and not too heavy even though it was in the 70s. It was substantial but didn’t leave me feeling overloaded. Plus the taste with perfect, which I find sometimes lacks with mushroom soups.
After the soup I had the risotto with grilled ramps. The ramps (or ramp? They were tangled together and may have only been one) were good but not overly flavorful and the risotto was creamy but didn’t have much else going on. However, it was still pretty damn good risotto- cooked perfectly and like I said creamy, which you can’t go wrong with.
Final verdict is that I’m a vegetarian, and this is still one of my favorite restaurants in town. The specialty cocktails are great and the menu is consistently good, even when incorporating whatever is freshest at the market, which can be difficult.
If you want a taste of big city atmosphere in Chattanooga, and cuisine, hit up Easy.
